Recipe for shahi paneer

Ingredients:

  • For the onion-tomato puree:
  • 1 tbsp butter
  • 2 pods of cardamom(ilaayachee)
  • 1-inch cinnamon
  • 1 pod black cardamom
  • 3 cloves
  • 1 sliced onion
  • 3 garlic clove
  • 1 inch chopped ginger
  • 2 chopped tomato
  • 1 cup of water
  • salt as per taste
  • For curry:
  • 1 tbsp butter
  • 0.5 tbsp jeera
  • 1 bay leaf
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1/4 cup cream or malai
  • 100 gm paneer or 15 paneer cubes
  • few saffron threads or Kesar
  • 0.5 tsp crushed Kasuri methi
  • 1/4 tsp garam masala

Preparation Method:

  • Take a Kadai, and heat 1 tbsp butter in it and add 2 pods cardamom, 1-inch cinnamon, 1 pod black cardamom, and 3 cloves and saute well.
  • Now add onion, garlic, and ginger. saute slightly until onion gets soften
  • Further, add tomato and saute slightly. Also, add water and salt. Mix well.
  • Cover it and boil for 20 minutes or until it softens completely.
  • Cool it completely and transfer to a blender. Blend to smooth paste without adding any water.
  • Sieve the puree making sure the puree is smooth. Keep aside.
  • In a large Kadai, heat butter and saute jeera and bay leaf.
  • On a low flame, add turmeric and chilli powder. saute slightly until the spices turn aromatic.
  • Add the prepared onion-tomato puree and mix well.
  • Further, add cream or malai and mix it until everything is well combined.
  • Then, add paneer and saffron and mix well.
  • Cover and simmer it for 5 minutes or until flavors are absorbed well.
  • Now it’s ready.
